The top speed video was done by holding the camera and the wheel at the same time. Not easy or recommended.
For hill climb videos I used a variety of cameras and mounts, I was never very happy with ...

when I used the 206 clutch master cylinder and the 406 slave cylinder I had a low biting point but the pedal was not stiff. (I've changed it now)
I'd be interested to know how he does it.

Did he tell you how he converted it from cable to hydraulic?
Is the pedal action stiff or just a low biting point?

The crank sensor will not affect the engine performance once running. So unless you have two problems, it must be something else. No engine management light on?
Could be coolant temperature sensor.

You can find a master cylinder that has the right number of ports, the right thread for the pipe unions, fits your servo, and can fit your reservoir.

Yes you can put any engine in any car. Although a BMW v12 engine and gearbox is about as long as a 206, so its not an easy swap.
I have seen plenty of swaps on 205s and 306s (twin v6, supra engine, ...
