Can anybody please tell me exactly what this button does?
Reason being I have pressed it three or four times now and every time my expansion tank has got too pressurized and the lid has blown open. Then it spills all the water/antifreeze and then cause there is no water, causes an overheat.

That is the button that re-circulates the air in the cabin.
Do you get any heat from your heater?

It's something to do with recirculating air around the car I thought I read in the handbook.

Maybe you need a new cap, providing you are showing no symptoms of headgasket failure.

The cap works a bit like a thermostat (I may stand corrected on this, but I am pretty sure),
So if it isn't that, it could be the thermostat in the engine may be sticking.

Air recirculation button. Instead of bringing in fresh air through the pollen filter, it just sends the air allready in the cabin around again. For example you go along a stretch of road that has a nasty stench to it, it supposedly stops that coming in, but once you notice its too late and you would just be sending it around and around again making it worse.
Also good if you have someone your not too fond off in the car and you want your worst fart to linger

How on earth does the button cause it to over pressurise if it's just recirculating the air in the cab :/

Maybe
As I said that when you press the button it stops air from outside coming in so because there is no fresh air coming through your heater matrix is hotter than normal. That could be why your header tank is letting your coolant out as maybe your cap is gone.
Try a new cap, as they only cost pennies. If still no better, move onto the next thing.
Try using the search with your symptoms
