206 Erratic Fan and temp Guage

Hi

206 1.4 Auto 2000

So the fan on my car has been coming on low speed around 70 and then full speed around 75 80 at which point it stays full speed until the car is switched off.
I also have the temperature gauge shoot into the red with the STOP light flashing. This is random and it goes back to normal sometimes.

Fixes so far
Repaired the negative lead from battery to Gearbox
Continuity checked the lower loom from bonnet fuse box to fan relays
Replaced both relays for new
Replaced Temperature sensor (Green Cap)

Does anyone have any further things to try?
Could it be the Fan resistors (plug bottom left of the Rad)
