Remove the Thermo and hard wire the fan to a switched live |

No point running the cooling fan at anything less then 89 deg C as the thermostat will be shut & there will be no coolant flow from the engine through the radiator.
Until the thermostat opens to allow the hot coolant to flow in to the radiator, it & the cooling fan are basically not doing anything to aid engine cooling. |

Seeing as the OP is based in Iraq which is a much hotter climate during the daytime then the UK I would be looking to fit a better spec of radiator for more cooling then trying to make the fan cut in earlier. |

Im not sure why you'd want to do that, but unless you can get a cut in switch that operates at that temp or adapt one, a manual switch is the only way. |

I think he's wanting the fan to cut in at 75-80 deg.
Im not sure how you would do that but I think you could get the fan hooked up to a button and that way you could turn it on when you like. |

Your a bit unclear on what you are looking for here...
Can you explain what you are trying to do?
Are you testing the fan?
Is the fan broken and you're looking for a fix? |
