How easy is it to fit new airbags?
I've managed to get hold of a full set up, steering wheel, passenger airbag, ECU module, rotary cup.
or is it best to get a pro to do it, this is the only thing stopping me from getting rid of the car.

It's pretty easy actually... but only if you have the correct partnumbers...
I did a swap last year on my imported preplexed 206...Changed steering wheel- and passenger airbag, safetybelt pretensioners and module...Didn't replace the rotary cup (wasn't knackered)...
But be sure to disconnect the battery, ground yourself to get rid of any static and don't wear synthetic clothing before and during work with explosives...Believe me, I know, being a former armourer in the Dutch airforce working with electric primed explosives...
