So after getting a brand new clutch 8/10 times changing gear is smooth as silk. However the odd few times it feels a bit knotty trying to change gears.
As far as I know from all the previous jobs that have been done on my 1999 206 at no time has the gearbox oil been changed.
My question being would this be a cheap way to see if I can solve the odd time it stuggles to get into gear before thinking the gearbox might be on the way out?

You have the wrong gearbox oil. It will only ever be smooth with 75-80.

he probably still using the orginal gear oil since the car has born

would have thought it was changed when the clutch was done but he didn't say if he did it or a garage.

I didn't do the clutch myself, but as far as i know the gear oil has not been changed

what car what engine?
cable clutch or hydraulic? have you check the gear oil level?
did it happen when down shift or up shift? cold or hot? which gear most likely when it happen?

I would ask whoever did it if they changed it to start with. It can be that and its the easiest thing it could be.

Leave it for Afew weeks and it should settle. Mine was like that when mine was first changed but after Afew weeks it was fine
