All you have to do is open the door, pull the tweeter cover away, you will see the 3 bolts. Undo them, replace the wingmirror, re-tighten. Admire your work.

Also, sounds stupid but I've never really thought about it, but are the wing mirrors on gti's always black? looking into it it seems so....

I'm a muppet when it comes to this sort of thing but surely the electrical side will just be a clip in the connector type job?? or at least i hope so!!

You will either have a white 3x3 connector or a brown 2x5
If you buy mirrors with a different connector, you can change them anyway. Or hard wire them in
