are wishbones changed in pairs? or will changing one side do?
also is it recommended to change the drop link too when changing wishbone?

The drop link is not connected to the wishbone so changing it would only be worth while if it knackered

Its not too difficult. Can be a bit of a fiddle to get the ball joint back in the hub correctly.
Remove wheel
Remove ball joint to hub bolt.
Getting the wishbone out of the hub is hard work. Keep belting it with a hammer / get a big bar on it to get it out the hub.
Remove two female torque bolts from the subframe and try to push the hub / driveshaft out the way to get the bolts out. In future just put the bolts up the way as its then easy to do next time. If you cant get them out or enough clearance then its a driveshaft out job.
Remove old wishbone.
Insert new wishbone.
Put bolts in subframe but dont fully tighten.
Line up ball joint in the hub and jack that end up into the hub.
Look closely into the hub hole. The ball joint has a slotted section that the bolt will fit in. If the ball joint is not in enough it wont fit. If the ball joint is in too much it wont fit either.
Refit hub bolt
Refit wheel

I have a couple of times so i've just whipped the grinder out and ground a bit off the washer part of the head of the bolt so it slips in past the driveshaft.

Not good practice to put the bolts in upside down because should the nut come off the top then the bolt will slip out and would cause the car to become hard to control and dangerous. Putting the bolts in from the top means that should the nut come off then the bolt will be held in place by gravity. Also when i do a 206 lower arm i remove the wheel and always jack the hub up first to take up the travel in the spring and then put some spring compressors on then release the jack. This means the strut is not pressing down on the wishbone so hard and makes it easier to remove and refit.

If a nut is fitted correctly onto those bolt they wont come off and I drive over a lot rougher ground than you will on the public roads

and i didnt put the bolts in the wrong way up i decided they were put in a certain way for a reason and put it all back as it was originally
