I took the handbrake off its base so it wouldn't be so much of a ball ache to take the centre console out as it was last time. Anyway I couldn't get it back on so I thought never mind I will slacken the cable, however...
The nut has had it and just turns on the same point of the thread meaning it won't come off. Also I can't take the cables out the other side as to get the drums off I need to slacken the cable...
Any ideas? Before anyone says it I am not taking a grinder inside my car :D.

You could try using a small open ended spanner. Put it over the thread and up against the the face of the nut. Apply lots of pressure onto the face of the nut while trying to slacken it off. If you are lucky the nut will catch a thread and begin slackening off.
