I had a new clutch cable fitted but now clutch pedal sits higher than other pedals and bite is very high and car now struggles to get up hills as if clutch is still on. the garage checked my clutch a couple of weeks ago and said it was fine.

The clutch "being all right" as your garage says isn't the problem, it's where the biting point is.
Fitting the new type cables requires some thought and it's very easy for someone to have installed that incorrectly if they didn't follow the instructions implicitly. That would result in exactly the symptoms you have of clutch biting too high and clutch not fully engaging.
A test might be to put handbrake on tightly and then try to move off in 2nd perhaps. If the engine doesn't die away then the clutch isn't engaging properly. You sound like you're already experiencing this on hills, if you smell burning going uphill then don't drive the car much at all until you get it sorted
IF the new cable was installed incorrectly then more often the only remedy is to fit another new cable as they are a sort of one time snap fit and take up the slack in one direction only, all in one go. I know a lot of mechanics were surprised by the design of these new cables. They were designed to make installation easier but you have to follow the instructions rigidly or else it's all ruined. Any technician that goes into it with a feeling of "I've fitted plenty of clutch cables before so I don't need to read the instructions" is going to have an expensive time at £30 a cable (or they are going to try to convince the customer that nothing is wrong with their fitting )
The clutch pedal height can be adjusted on some models but you'd need to get the cable installed properly first THEN adjust the pedal height to suit you

But you can adjust the pedal height to be level by a 13mm adjust bolt on the actual pedal mechanism , just above the pedal itself on many 206's. You can on mine for sure. It doesn't affect the bite point though pedal height adjuster<< click here
