Never done this before. Is there any guides/procedures on how this is done in here and any advice you could provide?

Always do one side at a time so you can look at the side your not working on if you get stuck. Also make sure you bleed the brakes after. Just search online for shoe replacement. Remember it can be quite tedious refitting so try to take your time. I've seen some people put the springs and shoes together before refitting onto the hub. May be easier that way
