.... also, cant seem to find the other grey/yellow connector on the passenger side. ( as in pic 1)
would it be buried underneath the light somewhere?

thats me sorted by the looks of it then
just got me a stalk from a preplex gti (thanks to belview  ) , and hopefully have gotten some crystals for middle of next week.

mmmm..
still having difficulty in locating the H7 connector on the passenger side.
doesnt look like any wires have been cut away though.
... where would it have been hidden , any ideas guys ?

Most likely hidden under the headlamp or right in the corner.
Be easier to find with headlamp removed.

.. in the event that i find it has been removed, i take it i could just rewire in a H7 plug on the H4 wiring ?

Yes, should be ok as long as its wired up correctly.
