I wouldn't of thought so unless you know of something that would have restricted the air flow on you car recently

Too much air or too little fuel? My Astra did this when the fuel tank baffles came loose. Looking around on the vauxhall forums I found several things it could be before I checked the baffles.
Map sensor
Idle control valve
Egr valve
Throttle position sensor
Coolant temp sensor
Air leak
Fuel pump
Fuel leak allowing air into the injectors
Collapsed cat
I know it's not the same manufacturer but these can all cause kangarooing.
Hope something helps and you don't end up replacing everything like I did before finding out its something simple.
If its sucking too much air has the sensor fallen out of the inlet manifold or is the throttle body tightly bolted on?

Probably the map sensor then. That's situated in the manifold and measures the air going into the engine. If its not reading it correct it will be over or under fuelling.
