Where does it say if your car is a cat C etc?

Any decent HPI will tell you. Not all 'Cat C/D' are recorded on the logbook.

all cat C damages are shown on log book/V5, Cat D damages are not shown, also if car is imported from Northern Ireland Cat C might not show up on log book/V5 nor might it show on Hpi as GB DVLA and NI DVLA are not connect, nor are they on the same computer data base, nor do they exchange info.
I found out to my peril when I imported a car from NI recently and they had to email each other to exchange info.
