My mot runs out this month and I don't want to get it mot'd for a couple of months as it won't be getting used.
Do I have to inform dvla?
Also do you still need to sorn vehicles these day's if not renewing tax.

You only need to inform DVLA when the tax expires and put it on sorn or if you are taking the insurance policy off the car in which case you have to go and refund the remaining tax and place it on SORN.

you need MOT, tax and insurance all 3 together in order to have the car on the road (even you only park them on the street).
missing either one of them you got 1 month time to sorn it before getting fine

SO as its taxed do I not need to do anything when mot runs out, as long as its parked off road?
It will not be getting used.

Vehicle insurance law
The new vehicle insurance law means the registered keeper of a vehicle must keep it taxed and insured while using it on the road.
You must declare SORN if your vehicle is:
not taxed and off the road
not insured and off the road
taxed and uninsured - you must insure your vehicle or make a refund application with a SORN declaration to DVLA
If you're not insured and haven't made a SORN, you could face a penalty.
If you have a vehicle that is taxed and not insured which you will be keeping off road you need to return the tax disc. You can do this on a V14 (including nil value discs) and declare SORN at the same time.
And no MOT usually void your insurance

No mot voids insurance to be driven, doesnt affect if somebody sets fire or steals it.

You can only drive a car with not MOT to a garage for a PRE-ARRANGED MOT. Must be insured though.
As for sending the tax disc back ... someone had better tell DVLA .. I SORN'd our 206 when it wasn't being used but didn't bother with sending back the tax disc as it only had about 5 weeks left. And as it's only £30 I probably wouldn't have got much!

Just drive it without MOT if you know it won't pass, its only a £30 fine if you get stopped.
I drove mine for 3 months without an MOT....actually didn't realise it wasn't MOT'd till I came to TAX it though

I thought there was a maximum fine of £1000. According to theAA anyway.

The MOT is worth s**t anyway. It shows that the vehicle met the required standard at the time it was examined.
The DVLA won't automatically refund any valid tax disc just because you SORN the vehicle. They are a paper driven society and require form V14 (with tax disc) or V33 (without tax disc). You can keep a vehicle taxed even though it is not insured, as you may be getting insurance at the end of the month on payday, you just can't keep the vehicle in a public land, and it must have a SORN marker against it.
The answer to the original question is No, you don't need to inform DVLA that your MOT has expired, they will already know as it will be on the system. They will not send anyone out to look for the car being parked up, although if it is parked on the street, a police ANPR camera may pick it up as they drive past, but odds are they wouldn't look twice unless their performance indicators were down for the month, and in any case it's a £60 fixed penalty or a court fine of upto £1000, but I have never heard of anyone being fined the maximum fine in the soft UK courts.
If you declare a SORN to claim the unused tax disc money back or the tax disc expires, then the fun really starts. You cannot drive or tow using a rope or bar the vehicle to an MOT testing centre unless it is a pre booked appointment, and the garage must have a written record of the appointment. Too many people were getting garages to say that the car was booked in, although there was no proof. You can't drive the vehicle without a valid tax disc, and you can't get a tax disc without an MOT, catch 22.
Easiest way to get the car to the garage is either on the back of a trailer or ask the garage to collect it with trade plates.
