Could be the brake fluid level is low in the master cylinder.

If the STOP warning light comes on at the same time check the brake fluid level.
If its just the (!) warning light coming on check the handbrake switch.

mine does it to, im assuming the handbrake lever is a bit loose, i was going to try and tighten it because it only happens when im going over lots of lovely potholes, causing the lever to move and the light to flicker

Really needs the rear brakes looking at BEFORE any attempt is made at adjusting the handbrake cable,
Drums off, clean the shoes down with brake cleaner, check the shoes are ok, no leaks from the cylinders, free off the automatic adjusters & put it back together.
Then settle the shoes in before checking / adjusting the handbrake cable.

The shoes need checking in case they where damaged when the cylinders leaked, make sure the friction material isn't coming unstuck.
Its always advisable to replace brake shoes when leaking brake cylinders are replaced.

well did you checked your front brakes??!!because if the front brakes are worn out, then the oil level will get low, which make it peeps and flashes specially when you go up a hill or go fast on corners.

The STOP warning light would come on as well at the same time if the brake fluid level was low
