Another quick question, how does the fan know when to come on? is it triggered by the temp gauge? if so does that mean my car will overheat as my gauge doesnt work and just sits at zero.

no it a it's own sensor on rad

test it, start engine, wait for it to reach running temp and see if fan kicks in

There is only one coolant sensor on the GTi. The ECU switches on the fan when the sensor tells the ECU the coolant is at a particular temperature. The ECU uses the same infomation to work the guage.
