I want 3500 for it which doesn't seem expensive in comparison to some I've seen

3500 is a good price, but I will tell you now you would get no where near that much from breaking.

At the end of the day its up to the OP if they break it OR sell it 
It will be worth more as a complete car.
Breaking a car is a pain as you get idiots dibbing parts & then not coming up with the money / letting you down
