If the thermostat has failed open the car will not get up to temp for ages ( hence stuck at 70 degrees) then when it does get hot there's no reserve of cooler water in the rad so the temp will spike high for a short time, probably for long enough for the stop light to come on. The fan should kick in if thats the case though

To answer a few questions: The heater comes on fine. The car temp gauge goes a bit higher when stationary or slow uphill driving, comes down fine when driving normal again. Never overheats. The fan come son when temp shoots up. I haven't checked the radiator hoses, but the engine doesn't feel hot after the temp has shot up. Sometimes the temp gauge comes down again a few seconds after it shot up.
I haven't taken the car for a longer drive for a while, so I am not sure if the problem is still there. I think it's time for a good 60 minute trip.

I have the exact same issue as this. I also know nothing about cars, but have been told that it may be the Head Gasket has gone,
