You might want to look again because there's a set on eBay that match your decription down to the T. I'd buy them just to have completely custom retrimmed. But good luck with retrimming using the original material because the top cover cost more than a mint GTi180 interior costs and it's not easy to swap over.

200 quid for a GTi180 interior with 3 holes in the drivers seat isn't cheap.
