You could proberly get rid of all the airbag, stereo alarm cables and just disable them via Lexia, but obv your going to still need rear lights and the stuff

Why not remove the SP arches? A track car doesn't need them.

i've just tidied my looms up (ok, so its a 138 but still!) put them in spirwrap/convuluted tube and fixed them securely. not willing to chop anything out atm as you never quite know what, if any, problems it could cause.
Dont think you really need to and its not gonna save alot of weight either.

i may aswell just tidy it all up, few people say it could just cause probs , but still needs cutting anyway, when the cage was fitted, they made x1 mistake they forgot to keep the loom tucked up against the driverd door piller, now its on the wrong side of the cage and under the throttle pedal..

it wasant to save weight, just tidyness...

Should be able to lose a lot of wires. De-activate what you don't want or get IMMO removal, then chop/remove things.
But to be honest, you should be able to just cut most things out, as long as you don't remove wires that are part of another circuit e.g don't go cutting earth and power wires willy nilly, ensure to check where they go and replace if needed
