Try filling the tank to the brim & seeing of the light goes out / fuel gauge shows the true level.

My gti yellow light comes on half way between quarter and empty mark.
Don't know if this works but if you manually move the needle up a notch will the yellow light come on later?
Obviously check that it's reading right first.

My CC does the same and the display tells me I've got around 60 miles left
Not that it matters as I always put petrol in it when the light comes on

My HDi GTi usually comes on at around 50 miles,
this has been pointed out before (by MR_BSI i think) that the light comes on when there is 1 gallon left in the tank, this seem accurate on mine as a quick check on my average MPG (says 45 mpg) then my total miles left is 45, which all seems to tally that it is working correctly. i have yet to push it to see the miles remaining to 0, or --- as it says in the manual.
as for the op's problem i would say there is a fault somewhere, as it should not be on if there is over 1 gallon in the tank.

It needs the BSI updating, common bug in the software. And it was me who said there was a gallon left.

I know, I put a gallon in the car the day it was delivered and asked the question above as light was still on afterwards, and as explained turns out it was delivered with fumes in it.
I personally never run my own cars with less than a 1/4 of a tank
