is there any way you can bleed drum breaks without using the grease nipple as it has sheared off?

nope....... best get it fitted with a new wheel cylinder. They are not very expensive

will i not need to bleed the brakes after refitting the new cylinder though?

you have to bleed through the nipple,other wise the air will stay inside,try to get a new nipple from an old cylinder,or replace it all

You can mess about for ages trying to get the old nipple out but they are buggers once seized and broken. By a new cylinder (as above they are not expensive) and a brake hose clamp as that will minimise fluid loss and make bleeding the system much easier.
New cylinders can be bought for less than £15 - definitely not worth faffing about with the old one.
