Depends on what you going for really.

Looks :T. here are many types of coilovers.
Cheap ones are real s**t . But if your not using then for Preformance then why not Smile
The more you pay the better quality they are.
Iv heard that coilovers make the ride really choppy.

Preformance wise
Springs I'd go H&R or Eibach,
If you want more the Bilstein or H&R shocks Smile
Again the more you pay the better quality.

Iv got Bilstein & Eibach set up on mine and it handles brillianty.

I also no tht Koni FsD's are also a good set up as my mate has them (on his A3 mind)

Hope this helps you,
Also search this site there are loads of lowering questions and answers
Search button is your friend Smile

There are no springs on the back, the Eibach kit is only 2 springs.
I also have a 180 rear axel rebuilt by IM axle,
You have to adjust the torsion bars to get the drop at the rear Smile
Also remember the Gti 180 axle is lower than a standard one by about 10mm I think it was when I measured it Smile so 35 mm will be plenty as that's what I have done.
If I was you I would go 30mm on the rear Smile

At the end of the day the choice is yours to make mate.
