Looking to strip out the interior of my car to turn it into a track car, but at the same time I wish to keep it road legal. Does anyone know exactly what can be stripped out (literally to the bare minimum) or know where to find out. Cheers

best bet would be to read the MOT guidelines so that you know what they test for!
I also imagine off the top off my head you would need to send your V5 off to convert it from being 5 seats to 2 seats!

Basically as benjsy says. Anything from the B post should stay.
You could change the seats and seatbelts to buckets and harnesses. You'll need the front airbags for the MOT and also the dials/warning lights.

I hope this gives you some ideas... I drove like this for about a week (obviously, I re-added the driver side door). You can also have bucket seats and a roll cage (if you tell your insurance company, obviously). You couldn't get any emptier on the inside than this unless you start stripping the dash, etc. The dash is part of the safety equipment, though. So I recommend keeping all that together if you want to keep to the road. Possibly remove the heaters, radio, etc.
If you really want to kill weight that brown plastic sheeting will also come up and you can remove the leather from the gear knob and the plastic coating from the handbrake like on mine. Would recommend getting a lightweight steering wheel too.
Note: had my MOT LIKE THIS... Passed! They'd of send if it weren't legal!

It used to be for MOT that if its on it it had to work..so that said if it isnt on it it doesnt have to work...just common sense with an eye on safety and u cant go far wrong..
I see above the door cards are still in here and if u took those out u could lose the lecy windows and the central locking to lose more valuable weight and even strip the windows(not the front screen tho)and replace them with lightweight plastic ones..
Swap the mirrors too.

No you don't!
Airbags are not required if the car is correctly prepared for rally. Look at special notice from VOSA 03-2013. Been through this myself already this year.
Airbags on a track/rally car will do nothing whatsoever if you have the correct seat/harness installed. Nice that VOSA finally realise this...

Not that I've really looked into it, but the dash might not even be needed. As long as you can still demist the screen, but even that may not be a 100% requirement.
