I've removed the standard rad, fan and cowling from the race car. I'm replacing the rad with a Golf GTi one and an aftermarket fan. The standard rad doesn't have a thermo switch fitted, so what sensor/switch activates the fan?

the 206 don't have any switch fitted on the radiator itself,only the temp. sensor,and the fan relay and ECU controls the fan to kick in.

The ecu uses the coolant sensor to tell how hot it is. If it wants to switch the fan on it triggers one of two relays to switch the fan on.
2001 GTi 138, Bilstein Sprint dampers, H&R springs, 21mm Peugeot Sport torsion bars, 22mm rear ARB, Peugeot Sport Group A wishbones, 283mm discs, Goodridge stainless hoses, Maniflow 304 grade 4-2-1 2.5" manifold and system, 200 cell cat, Richard Longman head, 45mm Jenvey throttle bodies, 9.5mm TB spacers, 90mm air horns, Jenvey throttle linkage, Jenvey fuel rail, Aeromotive and Goodridge fuel fittings and braided hose, ITG sausage filter, Radtec custom radiator, Piper Ultimate Road cams, Piper vernier pulleys, Omex 600 ECU. Saxo electric PAS pump, Vibra Technics engine mounts. Samco coolant hoses, TTV steel flywheel, 4.76 final drive ratio, 307 CC 180 ratios. 2019 BMW 530i. 2017 Mercedes C300 convertible.

As I have an Emerald ECU, I guess the fan temp must be controlled by that

If the original ECU is still in place and has its own coolant sensor it can stay where it is and control the fan.

I've got mine controlled by the Omex ECU and I can control the on and off temperatures.

I'll have to find the lead and plug in for a look, it's been 2 years since I last looked at what the ECU settings are
