Cars been off the road for a while, recently got it insured/tax'd/mot'd but not driven it since and its not been started in weeks as i had another car, went out today and the coolant in the header tank looks like a slush puppie
Whats the best way to de-frost it so i can drain it and add anti freeze without damaging anything?

tbh mate the best way without doing any damage is to let it thaw and drain it as your gonna struggle to get to all the ice to defrost it if its alll frozzen
failing that use a hot air gun hair dryer to thaw it out just undo the bottom hose and keep heating every thing up to clear it through take some hose off if nessecary

Just leave it and let it defrost over the next few days. It will have frozen the engine block as well probably.
