So I got in my car this evening and turned on my lights and started driving, a minute later I noticed something was bugging my eyes and found out the Main clock does not dim when turning the lights on.. thoughts?

Well you can try another clock to see if it will be dimming or not,so if it don't dim,then you have to check for something else,if you could come to Hebron,I can check it for you

Does the headunit have a display? If so, does that dim?

Check for broken/disconnected wire in the connector. IIRC, if the wire that signals 'lights on' is broken/interrupted the clock /display remains on bright.

There are 2 buttons coming out from where the speedo is, press and hold I think the right one, should get brighter or darker, press again for vice versa......I'm helping!

Only one button on my speedo, for trip setting, tried and and didnt do anything but thanks for trying!!
Asnyways I kinda' like the clock as it is now, brighter, so I can read it when driving at day time with my lights on
but i'll still check for the wiring to see if something came loos.

you sure there one ? i have two. one one the right which changes mileage display and resets how far you have drove. and one on the left that you click and that adjusts all the lights on the clock and centre display

If the OP only has 1 button on there instrument cluster then they have a non plexed car & will have a dash dimmer wheel next to the headlamp leveler

Check the dash dimmer wheel is working correctly, when they fail its normally fully on or fully off, its just a variable resistor on non plexed 206's.

I'd try cleaning the connector plug on the display.
