I have just bought a GTI 180, there is no middle rear seat belt. Can you buy a lap belt type to fit?

The 180 is not designed to have a person in the middle.

GTI 180 V5C log book should also have 4 seat on it somewhere as that what the 180 was certificated for.

Well you have to tell them anyway as you have changed the standard interior.
It only takes seconds for anyone to see what the car rolled out the factory fitted with using the vin number
