Fill up the expansion tank to below maximum line, start up your car and check for any leakage on the radiator, water pump and rubber hose.
Thermostat is a good first choice to check, since it cost less than a tenner u might just change it saving all the trouble doing the work twice.
Asn an emergency procedure just in case u need to drive your car and u can turn your heater on full blast to bring down the temperature. However if water level went below, your heater won't work cause no fluid to transfer over the heat.
After u change the thermostat, make sure there's no air trap inthe system. Good luck!
One more thing, u do need to have a few bottles of water in your car just in case.

Perhaps the engine cutting out was the car getting hot enough to seize or the head gasket has suffered complete and major failure.
I would get a compression test done. Look for 170psi minimum and all cylinders within 10% of each other.
Also I have seen head gaskets fail badly enough that when turning the engine over the exhaust pipe is almost like a water hose. Have a look and see if there is any water coming out of the exhaust.
NOTE: a failed head gasket doesn't always allow water to mix with the oil and cause mayonnaise on the oil filler; it can go straight out of the exhaust pipe.
