Use your experience to relate to modern cars. Many things are the same. Do the basics, make sure plugs and air filter are in good condition. Rather than a coil and separate plug leads, it's all in one coil pack

What made you decide to use more choke on the older cars? The engine temperature
How do modern cars determine engine temperature? The ETS

What made you decide to put the choke back in again? The engine temperature and the exhaust sound rich or lean?

What checks out the exhaust for the correct mixture? The lambda sensor

my car does similar thing. chugs and bounces around when cold, but once warmed up (2-3mins) its absolutely fine. bare in mind only only did it on cold days (winter mainly, hasnt done it since march this year)

what about spark plugs? or are they part of the coil pack on these cars?

change the coolant temp sensor. worked perfect. and makes 100% sense to be the fault causing your problem.

fixed my problem, which was your problem.
