Im not very knowledgable about electrics on cars, but my thought is that it could be a blown fuse, not too sure on the dash problem, might sound daft but you mean heating controls etc, not the speedo backing light?

Put the lights on and try to start the engine. If the lights go off then the battery is flat.

well before you change the battery, make sure that the (+) and (-) terminals are well pluged, and tighten,if they are loose,it can do what you said it did

he above and a few other possibilities.

Short circuit draining the battery but not enough to blow a fuse or the short is on a none fused lead - it can happen.

Alternator fault and battery discharging via the alternator.

Alternator faulty and has overcharged and damaged the battery.

Batteries can short circuit internally and while it isn't normally as instant as you have described it can be.

If this is NOT a sealed battery check the electrolyte level. If it is low top up with distiled water. Do not brim it; there will be max level indicators in each cell.

Thank you for updating; most people don't bother and that is frustrating.

The plastic clip on lip may be just show and unclips to reveal the screw caps to each cell where you are meant to top it up.

Looks like you have just been unlucky with the flat but check all main leads and earth strap for security - it could be waiting to happen again.
